Acetyl choline is a neurotransmitter, a brain chemical that enables nerve impulse to pass from one nerve cell to another.

For a nerve impulse to cross a synapse, the sending cell releases a tiny amount of a neurotransmitter, often acetylcholine. The neurotransmitter allows the impulse to pass to the next nerve cell. 

After the impulse has jumped the synapse, the sending cell releases a tiny amount of enzymes that cleans up the neurotransmitter, preparing the synapse foe the next nerve impulse. in the case of acetylcholine, the enzyme  is acetyl cholinesterase or cholinesterase  for short .

In patient suffering for Alzheimer’s disease the level of acetyl choline is low which seems to explain why their mental function decline.

So to treat Alzheimer either acetyl choline level has to increase or the acetyl cholinesterase level has to come down. The two medicine used are tacrine and donepezil. These are acetyl cholinesterase inhibitor.

Pea, black beans, navy beans, black eyed peas, ground nut , chickpeas, kidney beans, field peas.

How to prepare?
Put all the legumes in large bowl of water allow to soak overnight. In the morning transfer beans to larger pot of water add ½ cup of barley for every cup of beans, bring the water to boil, reduce the heat and simmer until the beans are tender.
